Serves 2 as an appetizer / side salad

Goats Cheese and Lemon Herb Salad

A fresh, zingy salad using a dressing made from finely chopped herbs and the finely grated zest of a lemon. The best part is the full-flavoured soft goat’s cheese and the sweet, plump cherry tomatoes. This would make an ideal light appetizer, but you could also enjoy it as an accompanying side dish with your barbecued meats.


small handful curly parsley
2-3 basil leaves
pinch dried oregano
zest of 1 lemon
pinch salt
generous glug best-quality olive oil
handful mixed salad leaves
handful wild rocket
5-6 cherry tomatoes, halved
¼ red onion, peeled and finely sliced
60g soft goats cheese


Use a sharp knife to finely chop the parsley and basil. Place into a little bowl and add the dried oregano, lemon zest and a pinch of salt. Drizzle over a very generous glug of olive oil and mix well.

Combine the salad leaves and rocket in a salad bowl and add the tomatoes and red onion. Slice the goat’s cheese into smaller pieces and add to the salad.

Pour over the dressing and use salad servers to gently toss, ensuring the lovely dressing coats all the elements of the salad well. Take to the table as is, or divide between two dishes.
